Mmmmmmmm! Today I was snooping about to see what I had that appealed to me for a mid morning smoothie.
I’ve just made LOADS of coconut kefir milk, had a few pecans left in a bag and … lots of mangoes! (Been playing with ice cream ideas. ;-))
So that lot went in a blender and …
Pecan, Mango and Coconut Kefir Smoothie
Gather Your Goodies
1 1/2 Cups Coconut Kefir
1/2 Heaped Cup of Fresh Mango
1/4 Cup Pecans
1/2 Teaspoon Baobab
Squeeze of Sweetener (I use gluten free rice syrup – looks like honey and has same consistency)
2 Cubes of Ice
It’s Action Time!
YOU know what to do! 😉
Pour the coconut kefir into your blender
Add the rest of your ingredients (bar the sweetener)
BLEND
Taste and add sweetener if you need it
Pour
Drink
Feel just a teeeeeny bit smug that you’ve had not only a delicious smoothie; also a whole bunch of friendly little bacteria ready to help make your immune system stronger. Awwww. Bless’em.
You haven’t made coconut kefir yet? Slap handy!! You can use normal coconut milk, but that won’t give you your probiotics and it’s muuuuch sweeter. This has a lovely light fermentation fizz to it .. and it’s sickly sweet.
