Greek Salad

A super quick meal for you …

Gather Your Goodies

Bed of rocket
Flat leaf parsley
Cucumber
Celery
Avocado
Pecans
Sheep’s Feta
Olives
Poppy seeds

AND

Salad Dressing

It’s Action Time!

  • Create a bed for your salad with rocket leaves.
  • Add some chopped flat leaf parsley.
  • Chop cucumber into small cubes (slice first, then cube each slice)
  • Chop celery into thin strips and scatter around
  • Cut an avocado in half, use a knife to score through to the skin and make slices.
  • Scoop out the slices with a spoon and place around the outer edge of your salad.
  • Scatter pecans.
  • Make a cute little pile of feta cheese in the centre!
  • Places olives around the outer edge, between the avocado slices.
  • Shake some poppy seeds over the entire mix.
  • Drizzle salad dressing over the dish.

Done!

Honestly? FIVE minutes.

If you’re adding meat, pop it on a griddle or in a pan or under the grill 10 mins before you start your salad.

    I have to write about the blogfest soon! It was such a fun and useful day, wasn’t it?! I haven’t even checked their website yet for the photos. Oh gosh. Do you have the link?
