Quick Easy Fish Stir Fry

Do you ever arrive home from work and think … “Noooo! I just don’t have time to cook a fresh meal?!”

This is so quick and delicious and you could interchange the vegetables. You could, if you chose to include it, complete the roasted element at the weekend, refrigerate and gently heat and add to the dish during the week.

Quick Easy Fish Stir Fry

Gather Your Goodies

Use the quantities that suit you and add sufficient oil to the pan to coat it, plus a little extra. You can always add a little more if you need.

It’s Action Time!

  • Stir fry all your ingredients in avocado oil for 1-2 minutes on a low/medium heat.
  • Add lime juice and samphire, then cook for another minute.
    • (You could choose to stir-fry the samphire separately in goats butter, if you prefer and serve as a side dish.)
  • Add a few chunks of swede (pre-roasted in avocado oil, with garlic cloves in their skins).

So deliciously fresh!

Ooh I had a lovely stir fry tonight actually. I made sweet & sour chicken with loads of veggies and a few bits of pineapple with a light sauce from scratch of course! Yours sounds lovely. I don’t eat fish but no reason chicken wouldn’t work instead!

That’s a great looking recipe young Sarah and one i’m definitely going to try. Been cooking a lot of chicken and prawn or beef stir frys recently so this will make a nice change of flavour.
