Pecan Energy Bar

Pecans are such a delicious nut. Great for savoury and sweet dishes, soft, not overpowering and well .. I’m rather in love with them. Have you begun your love affair with them yet? 😉

If you’re like me and prefer a salad and fruit to energy bars, hold fire before you turn these down! They freeze really well and are super handy if you have to run out of the door without much warning and don’t know where/when you’ll be able to eat. Sold yet? 😉

Pecan Energy Bar

Gather Your Goodies

  • 500g Prunes
  • 125g Flaked Almonds
  • 200g Pecans
  • 125g Coconut Flakes
  • 125g Pumpkin Seeds

It’s Action Time!

  • Mix all your ingredients together in a food processor until smoothed into a large ball.
  • Line a shallow pan with greaseproof paper and rub with a little coconut oil.
  • Spoon the mixture into the pan and smooth out until it’s evenly spread.
  • Score the mixture into bars. It should make 12.
  • Place in the freezer with another sheet of greaseproof paper on top, weight down with anything that will hold it in place.
  • Leave until the mixture is easy to break into bars.

Ooh, Really?!

To freeze, I wrap them individually in tin foil,  piled into a ziplock bag in the freezer. This would be a far healthier snack for a child’s lunch box than many of the store-bought options that include ‘natural flavouring’ (chemically produced flavours) and additives. Also more nourishing than a biscuit or slice of shop bought cake. 🙂
